Stir-fried Noodles in Sweet Soy Sauce ( Pad Si-iu )
A popular street-food dish in Thailand that is based on stir-fried rice noodles with thick sweet soy sauce, fish sauce, Chinese broccoli and pork or chicken. Usually broad rice noodles (kuai-tiao sen yai) are used as the foundation for this dish, though other types of noodle can be used. The word for soy sauce “si-iu” comes from the Chinese Teochew dialect. |
