Just desserts for Varayuth

The well-known Channel 3 producer Varayuth Milinthachinda shows his talents as a patisseur

IF WELL-KNOWN TV producer Varayuth Milinthachinda ever gets fed up with the entertainment business, he can always don an apron and make himself busy in the kitchen. In fact, he's already made a start with the opening earlier this month Varano, a small cafe in trendy Siam Center.

The new coffee corner offers delicious home-made desserts prepared to both Western and Japanese recipes that go perfectly with a coffee or long iced drink.

Varano, he says, combines his name with the word "no". "It means that I probably won't be serving what the customer wants to eat but rather offering my favourite menu items. I don't accept orders or reservations. People who come here should expect just to enjoy what I am offering.

"Varano is my hobby. I love eating and cooking, so I enrolled in patisserie classes and learned the basics from specialists both here in Bangkok and in Japan."

The producer adds that he's been cooking for years as a way of relaxing and often takes the desserts he whips up at home into his Channel 3 to share with the stars. "They were so impressed, they talked me into opening this cafe," he laughs.



A small space measuring just 16 square metres on Siam Center's fourth floor, Varano has a long counter bar as well as two tables that seat six.

The dessert window boasts cakes ranging from red velvet to coffee, carrot and cantaloupe along with colourful macaroons made from Japanese bayberry, tamarind, black sesame, green tea, blueberry, chocolate and more.

"I use only the best ingredients," he says. "My fresh cream isn't made from butter so it's light and healthy."

Varayuth recommends we sample the Absolute Siam menu, which features a melt-in-the-mouth cake that's topped with spicy chilli paste and dried shredded pork (Bt145), along with lemon tart (Bt150), sweet and sour mango cheesecake with mango dip (Bt150) and Varano Drunk, a fruitcake that comes with a syringe of cointreau and kahlua(Bt165).

For a caffeine kick, try the Varano Orient (Bt95), a strong iced coffee made with beans from three different countries. Another favourite, he says, is the Chocolate Lava (Bt165), a smooth iced white chocolate frappe with chocolate fondant.
