Kitchen query
Dear Dr English,
If you were a restaurant chef, how would you explain to your customers the difference between a dish that is uncooked, half-cooked and cooked for a very long time.
Alfred Reyes
I presume you are talking about a dish that can be cooked and served with varying degrees of doneness, like steak.
Uncooked steak is a piece of raw meat. If the steak is cooked only slightly it is called ÒrareÓ. If you grill or sautŽ it until the outside is brown but the inside is pink, itÕs called ÒmediumÓ. When the meat is thoroughly cooked and the inside is mostly grey, it's called 'well done'.
So you would ask the customer, ÒWould you like your steak cooked rare, medium or well done?Ó

Recognise and recognition
Dear Dr English,
Please tell me the difference between the words, ÒrecogniseÓ and ÒrecognitionÓ.
Please give examples as to how they are used.
Kapil Bhatia
Recognise is a verb. It usually means that a person knows someone or
something or is able to identify something because of his/her past experience or knowledge of it.
As soon as Sarah heard a voice, she recognised that it was Tom.
Wendy recognised the skirt at once. It belonged to her sister.
We spotted an unusual animal that Dr Phil recognised as a Tasmanian tiger.
Recognition, apart from being the act of recognising someone or something as already explained, means the understanding and acceptance of a fact or situation.
Recognition of the labour shortage in the country has prompted the government to allow more foreign workers into the country.
The other meaning of recognition is the official acceptance that something is valid and proper.
Some NGOs suggested that the recognition of dual citizenship might help solve the migration problem.
And recognition can also mean the public acknowledgement of someone because of his or her achievement or abilities.
The award was a recognition of Sita’s devotion to community work.
