Mud crabs are meaty little crustaceans, and the chefs at Up & Above, the lofty restaurant at the Okura Prestige Bangkok, will be having a feast with them all through September.

Found in abundance in river estuaries and coastal mangroves across the world but particularly abundant in Southeast Asia, fastgrowing mud crabs are a summer delicacy, prized for a high flesh content imbued with all the sweet flavours of the sea.

Next month’s menu opens with a choice between two delightful appetisers – Mud Crab Spring Roll with glass noodles, shiitake mushrooms and cabbage, or Marinated Mud Crab Salad with avocado, spiced tomato salsa and basil sauce.

Both are light and delicious preludes to the succulent main courses, which include Risotto of Mud Crab with asparagus, tomatoes and tarragon; Stirfried Mud Crab seasoned with yellow curry powder and Thai celery; and Whole Mud Crab Linguini with cherry tomatoes, green olives, basil, garlic and chilli.

Pick a day (or more than one) anytime in September. The restaurant’s open daily from noon to 10.30. Alacarte prices start at Bt480.

Up & Above is on the hotel’s 24th floor. Book a table at (02) 687 9000 or upandabove@okurabangkok.com.
