The second course, Silky Chicken Liver Parfait Bruschetta Crispy Pancetta, Caramelised Onion Merlot, Balsamic and Rosemary Jus, is a smooth chicken-liver pate lovingly paired with Chateau Tournefeuille Ubi Mensa-Lalande de Pomerol 2012.
Next is Unagi Risotto with Hijiki and Truffle Creamy Sauce, the rice cooked with three kinds of algae and served with Chateau Tournefeuille Lalande de Pomerol 2013.
The main course presents a choice between slow-roasted Australian beef tenderloin and baked cod with Parmesan cheese.
The feast ends with Double Chocolate Mixed Nuts Cheesecake served with sweet wine.
