
Thai International Airways may be offering direct flights to Oslo, but you don't have to travel all the way to the Norwegian capital to enjoy salmon, one of the country's best-known delicacies.
Greyhound Cafe's executive chef Torsith Saritwong has created a new menu around
Norway's famous fish and he recently introduced his delicious dishes by demonstrating
his version of Salmon Pate. He was joined in the preparation by Thai-Danish heartthrob and
singer Peter Corp Dyrendal, who proved he too is handy with a spatula!
The salmon sensations are being served at all Greyhound Cafe outets branches through
October 31. Check them out today.
Salmon Pate
>>Fry chopped onion and garlic in melted butter over light heat until fragrant.
>>Add 100g smoked salmon and cook gently until mushy, gradually adding 100 gm of
melted butter.
>>When cooked, add brandy to taste.
>>Remove from heat and add finely chopped fresh herbs of your choice and one ladle (about 50ml) of whipped cream.
>>Ensure the ingredients are well blended and set aside to cool.
>>Put in the refrigerator until the pate has hardened.
>>Serve with thinly slices of toast or fresh whole wheat bread.
Other gourmet delights being prepared by Torsith with Norwegian salmon include a
Mini Pizza topped with salmon, red chilli, caper, anchovy and cheese and served with fresh tomato salsa; fresh salmon larb thickly sliced with Thai herbs and northeastern- style spicy
dressing; a Crispy Salmon Rice Bowl with sour-sweet-hot sauce and rocket leaves, and Meing Salmon, a delicious combo of fried salmon swith chopped green mango,
lemongrass, rice vermicelli, spicy sauce and romaine leaves.
