
Thongchai cooks not only for himself, but also for those who admire his cooking skills. His cooking was good enough for him to open his own restaurant, Sixth Sense at Erawan Shopping Centre. It is his second, after Tea for Two at Chan Issara. These restaurants are meant to be a haven for food lovers, operated by a food lover.
"I started cooking when I was 12. I was inspired by my grandma. I inherited many great things from her. She is Chinese, therefore, cooking was very essential. I love cooking as well as baking. I love watching food while it is being baked, taking a peek every few minutes," Thongchai said.
In fact, he enjoys every step, from finding a good recipe and shopping for the finest ingredients to cooking with heart and seeing the reactions of those who eat it.
Thongchai's favourite is "Almond Float", which is made from almonds, sugar and albumen. It is very healthy as it has no butter and no yolk, and so no need to worry about calories.
"Cooking is like working - there is something new to be learnt all the time," Thongchai said.
When a team member makes a mistake, he has to learn to understand them. He never loses his temper with his staff. Perhaps this is because he starts things from scratch, so he understands what subordinates are thinking because he has worked at that level before.
Thongchai believes everyone can be successful if they have passion and patience. The pursuit of achievement has no limit.
