Guilbaud's cuisine is French at the core, steeped in tradition; but it makes awesome use of carefully selected local products and typical Irish ingredients, sometimes with staggering creativity.

Complex dishes like calf's sweetbreads and liquorice served with parsnip sauce and lemon confit are absolutely breathtaking, while the simplest of simple dishes remain astoundingly delicious. The assiette of chocolate is a must-have for every diner.

Service is impeccable and dining a real pleasure in the stylish and minimalist dining room.

Lunch and dinner are served from

Tuesday to Saturday from 12.30

to 14.15pm and from 7.30 to 10.15pm.

The restaurant is sometimes available for private functions and corporate receptions, and has a separate luxurious room for private parties catering for up to 20 people.
